Guinness Chocolate Cupcakes!

All I can say is DELICIOUS!!!!!!!!!!

Here is the recipe:

Ingredients
1 (12-ounce) bottle Guinness Stout
1/2 cup milk
1/2 cup vegetable oil
1 tablespoon pure vanilla extract
3 large eggs
3/4 cup sour cream
3/4 cup unsweetened cocoa (I used Scharffen Berger Cocoa)
2 cups sugar
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda

Method
1. Preheat the oven to 350°F.
2. In a large mixing bowl, combine the Guinness, milk, vegetable oil, and vanilla. Beat in the eggs, one at a time. Mix in the sour cream.
3. In a large mixing bowl, whisk together the cocoa, sugar, flour, and baking soda. Gradually mix the dry ingredients into the wet Guinness mixture.
4. Butter 24 muffin tins and divide the batter among the muffin tins.
5. Bake 25 minutes, until risen and set in the middle but still soft and tender. Cool before turning out of the tins.

Vanilla Bean Buttercream
1 stick salted butter – room temperature
1 stick unsalted butter – room temperature
1/2 cup shortening
1 tablespoon Clear Vanilla extract
1 1/2 pounds confectioner’s sugar (powdered sugar, 10x)
4 tablespoons very cold milk

Directions
Cream the butter and shortening in the bowl of an electric or stand mixer. Add the clear vanilla extract and combine well. Begin adding in the sugar and mixing thoroughly after each addition. After all of the sugar has been added and mixed thoroughly, begin adding the very cold milk… one tablespoon at a time, combining very well after each addition (mixer on medium-high to high speed) until you reach the desired consistency.

Happy 80th Birthday Uncle Bob!!!

While home for my sisters graduation, we also celebrated my Great Uncles 80th Birthday.  I wanted to make the cake as masculine as I could, since most of the cakes I’ve made so far were pretty girlie.  To me nothing is more masculine and delicious than a German Chocolate Cake!!! Plus I heard that was one of his favs :).

Since we had a hectic schedule that weekend with my sisters graduation and all, the only thing I made from scratch for this cake was Coconut Frosting:

1 1/2 cups evaporated milk

5 egg yolks, slightly beaten

1 cup granulated sugar

1 cup brown sugar

2 teaspoons vanilla extract

1 cup butter

2 1/2 cups flaked coconut

2 cups toasted pecans

Combine the evaporated milk, slightly beaten egg yolks, granulated sugar, brown sugar, vanilla and butter in a large saucepan or heavy pot over low heat. When the butter melts raise the heat to medium, stirring constantly. The mixture will thicken after 10 to 12 minutes. Remove from the heat. Add the coconut and pecans and cool before frosting the cakes.

The cake and chocolate frosting were both from Pilsbury.  The cake turned out beautiful and delicious and was a big hit!! It was so good even, that everyone thought we ordered it!!! 😎

After 5 long years my little sister finally graduated from Kent State with her BSN!!!  While home for her graduation I got to decorate her cake…I just say decorate, because everything was to hectic and my mom thought it would be easier to just get the cake made.  One of her clients made and iced the cake and left it blank for me to decorate.  I really wanted to play with fondant more than anything. My plan was to make the colors of the decor red because that is the color I associate with nursing, but my mom bought Luau decor for the party. So I decided on bright green and pink for the accent colors.

The cake turned out great! The writing with icing, I still need to work on, but other than that I was very happy with it. 🙂

Yes…in case you are wondering…those are real band-aids on the cake. I didn’t have the right color to dye the fondant to look like a band-aid so that was my last resort.  So you know… I kept the paper backing on them before putting them on the cake. 😎

This Easter I wanted to try making one of those big cookies like you see in the grocery store.  I bought the Tollhouse chocolate chip dough and patted it into a round foil pizza pan and then baked it according to package directions.  I made Wilton butter-cream icing for decorate with.  This was really fun to make and it turned out a lot better than expected!!!

In class this week we made clown cakes.  I gotta say, I am not a big fan of clowns, but it was perfect timing considering it was my friends birthday at work. This wasn’t my favorite cake because the writing didn’t come out very good, and I don’t like the clown, but it still tasted good! Again the cake was just Funfetti from Pilsbury with Wilton butter-cream frosting.

Chocolate Cake with Whipped Strawberry Filling!

This week during the Wilton Cake decorating class, we learned how to make Butter-cream roses.  Since its close to Valentines Day I thought a chocolate cake with a whipped strawberry filling would be appropriate. =) Plus I love Chocolate!

1. I started off with two boxes (I wanted a tall cake…..if your pans are more shallow one box will be fine) of Pilsbury Dark Chocolate  Cake mix…just follow the directions on the box…let cool completely.

2.For the filling I just mixed together one container of Cool-Whip (thawed slightly) and frozen strawberries in glaze (thawed slightly).  Make sure the whipped cream mixture is chilled before you put it on the cake so that the top layer will be stable while icing the rest of the cake.

3. The icing is a Chocolate Buttercream recipe that I got right of the the Wilton website.

Pipe a wall of icing on the first layer to keep the whipped mixture in place and from coming out the sides.

Ice until smooth.

Add borders......

and flowers!
